Cranberry & Orange Tea Loaf
A simple one-bowl cake that comes together in minutes, this Cranberry & Orange Loaf is the perfect treat. Pairs perfectly with a cozy cup of Sweet Orange Spice tea on a chilly winter day. To ensure the cranberries do not sink when baking, give them a light dusting of flavour before folding them into the batter.
Cranberry & Orange Tea Loaf
Ingredients
- ½ cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- zest & juice of 2 oranges
- 1 tsp vanilla extract
- ½ cup fall-fat sour cream
- 2 cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1½ cups of frozen cranberries, dusted with flour
Directions
- Preheat the oven to 350˚ F degrees. Lightly grease a 9-inch loaf pan.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together butter & sugar until fluffy.
- Add the eggs one at a time, followed by the orange zest, juice, vanilla & sour cream. Beat until incorporated.
- Sift in the flour, baking powder, and salt. Beat until the batter just comes together.
- Fold in the frozen cranberries & transfer to the prepared loaf pan.
- Bake until the loaf bounces back to touch, or until a toothpick inserted in the center comes out clean, about 50 to 60 minutes.
- Let cool to room temperature before slicing & serving. Enjoy with a cup of Sweet Orange Spice tea
Yield: 1 loaf
