Defense Sipping Broth

We are BIG fans of healing sipping broths. It’s an amazing way to get nutrients into your body to defend it from the harsh elements of winter (especially where we call home in New England.) Defense from the Wellbeing Collection marries with this broth beautifully, adding green tea, echinacea, and elderberry to strengthen your immune system.

Defense Sipping Broth

Ingredients

  • 12 cups water
  • 1 yellow onion
  • 1 leek
  • 2 lemongrass stalks
  • 2 celery stalks
  • 2 carrots
  • 3 garlic cloves 
  • 3 tbsp ginger
  • 2 tbsp Tea Forté Defense loose leaf tea
  • ½ bunch fresh parsley
  • 4 sprigs fresh mint
  • 1 tbsp whole peppercorns
  • 1 tbsp miso paste
  • 2 tsp coconut oil
  • ½ tsp sea salt

Directions

  1. Start by washing your produce. The onion, ginger and carrots can be rough chopped with skins on. Remove the tops and bottom of leek, cut in half and wash out any dirt between the layers before rough chopping. Smash the garlic to release more flavor and rough chop the celery. Cut tops and bottoms off the lemongrass, cut into small sections and pull the stalks apart with your hands into strips.
  2. Place all ingredients in a medium-sized stockpot. Bring to a boil with a lid on. Once boiling, remove lid and reduce to a simmer for 40-60 minutes.
  3. Strain broth into a bowl or blender, discarding solids.
  4. Blend in the miso paste and coconut oil either by hand with a whisk, or in a blender to emulsify.
  5. Serve hot in your favorite mug.

Pro Tip: Add a pyramid tea infuser of Defense (which you can find in our Wellbeing Collection), into your mug of sipping broth for even more spicy-ginger overtones and immune-boosting qualities.

Yield: 8-10 servings
